The period characterized by pastoralism was quite large and the products of this activity for a long time represented the only bargaining chip: in fact, the term pecunia (money) derives from pecus (sheep).

The term cheese has later origins, deriving from the medieval Latin formaticum, that is milk coagulated in the form.

But the cheese is also known by the name of cacio (from the Latin caseus); in Spanish it is called queso, in English cheese, in German kase (note the extraordinary similarity between these names), while the French fromage is very similar to the Italian cheese.

According to mythology, it seems that the first shepherd of Sicily was a certain Dafni, a young man who lived in the Iblean mountains in a place rich in water "with a large quantity of oaks with stems twice as wide as those of other regions. of the world ”Daphnis, son of the god Hermes and of a nymph, was raised by the gods of the woods who also taught him to play the whistle. Gifted with great musical ability, he invented the bucolic song.

The young man used to accompany Artemis, daughter of the king, on a hunt. A poignant love soon was born between the two.
But a nymph, Naide. In love with the little shepherd in turn, she predicted that if he possessed another woman he would go blind. In fact, after getting him drunk, Artemis lay happy with him; but inexorable came blindness.

It seems that, out of desperation, the young man, after having wandered all over Sicily, threw himself off a cliff and that the god Hermes, pity for the bad fate of his son, had saved him in flight and brought him to Olympus. If Dafni was the first shepherd, Aristeo (another mythical shepherd, lime tree of the god Apollo and the nymph Cyrene) was the first cheese maker: he experienced that the main feature of the new food was a long conservation, a fact of extreme importance to the phoni of its use over time (it could be kept to make up for periods of food shortage).

In the reality of the time, cheese, in addition to being consumed normally, was also used to offer sacrifices to the gods, for banquets, weddings, popular festivals and was also offered to special guests.
